Why does a cucumber give out water when salt is placed on it?

This is due to a process known as osmosis. Osmosis is the phenomenon in which water, or any other solvent, will attempt to distribute itself evenly among solute particles.
Hence, if we have two solutions - one is dilute salt solution, and the other is concentrated salt solution - and - this is very important - they are separated by a membrane that allows ONLY water to move through, not salt - then what will occur is that water will move from the dilute salt solution to the concentrated salt solution until both solutions have the same concentration (not necessarily the same volume.)
Cucumbers are made up of plant cells, of course, and they therefore contain a lot of water in a dilute electrolyte solution. When salt is placed on a cucumber, therefore, water moves out of the cells in order to form a solution with the salt.
